Join the Craft Maltsters Guild for a two-day in-person workshop covering technical malt knowledge custom-tailored for the craft brewer or distiller. The course is scheduled for September 19-20, 2022 at the University of California, Davis in Northern California and provides a valuable opportunity for students to gain a deeper understanding of malt. Maltsters and farmers will also find the class an opportunity to learn how to better communicate with their brewing and distilling clients.

Barley topics from field to pint will be covered including:

Barley breeding and the North American supply chain
Aspects of measuring barley and malt quality
A review of the malting process and technology
Malt styles, flavor, and troubleshooting

This workshop incorporates hands-on lab activities where students get the chance to perform hot steeps, think critically about malt COAs, and perform grist assessments. Visits to the UC Davis Brewing Program’s pilot brewery, as well as a local craft maltster, Admiral Maltings, are also included in this experience. Additionally, all attendees will go home with DraughtLab malt flavor maps for both base and specialty malts and their own copy of the Craft Maltsters Guild Quality & Safety Manual. Additional copies will also be available for purchase during the class.
