Most operators at breweries end up spending many hours a week taking data on paper logs, spreadsheets, and white boards – but most of the analysis may stop there. With the use of proper tools, this data can be converted into real-time reports to make sure that each batch of beer is replicable and is consistent. In this 30-min talk, we will focus on using tools to set tolerances for brew log parameter comparison, graphing out fermentation curves, and starting to look at different critical brewing specs for proper consistent product. These analysis areas will help a brewing team be proactive on the improvement of quality with real-time analysis. We will then dive into the impact of sensory profiles and the importance of data from sensory panels for true to brand consistency. Finally, we’ll look into using the brew data to assess the costs behind each beer and understand ways to make the cost per pint of a beer consistent. These tie in with actual KPIs that a brewery should be looking at weekly, and per batch!

Speaker: Pulkit Agrawal, The 5th Ingredient
Bio: The 5th Ingredient was founded in San Diego, California in October 2017 by Pulkit K. Agrawal (PKA). PKA graduated from Harvard College and began working in the beer industry as a Process Engineer at Ballast Point Brewing, where he focused on packaging lines and nitrogen beer. Afterwards, PKA began consulting for breweries and during this time he saw a clear need in the market for a software system that would track all brewery data from grain-to-glass, with a particular focus on the brewer and process data. He launched the Beer30 system in January 2018, and it has scaled since , with more software development and more brewery customers! Now, Beer30 has modules that help a brewery track raw materials, brewing process, sales and distribution, and cost calculations with accounting integration.
