Proper sanitation of brewery equipment is paramount to making great tasting, fresh and flavorful beer, batch after batch. Dana Johnson, Technical Director of Craft Brewing at Birko Corporation, will share his knowledge and thoughts on all aspects of brewery cleaning and sanitizing from brewhouse cleaning, fermenter cleaning, brite tank cleaning, keg cleaning, packaging equipment cleaning, and exterior equipment and environmental cleaning.
This talk will detail which types of chemicals work the best, how much to use, how long to use them, and which ones are safer and better for the metal than others. Stainless steel passivation methods for both new and existing equipment will also be covered. This presentation will be followed by a Q&A session where brewers can ask specific questions about their procedures and processes without judgement or bias.
