Middle Tennessee State University

Fermentation Science Degree Programs

MTSU’s Fermentation Science undergraduate major is the only degree program of its type in Tennessee and one of only two in the Southeast US region. MTSU’s Master of Science in Professional Science: Fermentation Science is the only program of its type in the US.  Tennessee is home to a large and diverse community of food processors, and the most significant growth has been in the fermented foods segment of this vitally important industry. Courses in Fermentation Science cover all applications of fermentation, including the production of fermented fruits, vegetables, meats, grains, and milk, in addition to probiotics and medicines.  Internships are required for undergraduate and graduate students, providing vital learning opportunities and industrial experience.  Graduates are being employed in the brewing and distilling industries, entering graduate schools around the country, and launching new companies upon graduation.
