This presentation aims to briefly review techniques for the production of non-alcoholic beers and then address in detail processes that involve the control of fermentation and specific microorganisms that ferment part of the sugars, which are attractive strategies when the CAPEX of de-alcoholization is not feasible. Results with different yeast species, including the flavor impact, will be presented. Also, the presenter will highlight technical information about the microbiological stability of the beers and pasteurization.
