Hey all,

I'm a newbie when it comes to "beer clean" as an industry term. At our brewpub we use specific cleaning chemicals in the hand washer, but have had problems in the commercial glass cleaner. Our manufacturer states that no powdered cleaners can be used in our glass cleaner. I'm having a hard time convincing the staff to use no soap/only high temps. They still use some Palmolive and as a result, no head retention.

Is there a liquid "beer clean" product you suggest? Should I force them to use no soap? What do you use?

At home I use "Stem Shine" on my own beer clean glasses. It comes in both liquid and powder. I use the liquid for a few glasses to hand wash, and when I have a bunch to wash, say after a party, I use the powder in my home dishwasher.

The wine cleaner I can only imagine does not consider head retention and therefor, may have a rinse-aid. It obviously works well?

Is there a beer-specific, liquid cleaner out there?

Does anyone else use only hot water to clean glasses?

What do you put in your dishwasher?

just had a beautiful, brilliantly filtered, pilsner beer, 45 seconds and no foam,

As far as I know, there are two schools of thought on this subject.

First, check the Draught Beer Quality Manual. They have a procedure for glass cleaning which involves finding a good non-foaming cleanser, scrubbing thoroughly and then rinsing even more thoroughly.

Second, Dr. Bamforth has a glass cleaning procedure in one of his books. He recommends a high-foaming cleaner, followed by scrubbing and rinsing.

The main point here - rinsing. Rinse three times, hit it with the sanitizer, air dry, and then rinse with cold water before filling. It works for me.

StemShine works for me, no head issues, but as Bill suggests, I rinse thoroughly after cleaning. I don't rinse before filling though.
