What is the favourite range % of roasted malt in total throw ,
in producing dark beers.
Is any upper limit for colour , regarding unpleasent burnt flavour.

Use coloring malts if you only want color. To which roasted malt do you refer? Many companies produce a roasted barley and a black malt. They are NOT interchangable. Many folks make a stout with 2-5% of both primarily for flavor.
